• 1 large sweet potato (grated)

• 1/4 large cauliflower (steamed and mashed into small pieces)

• 2 tablespoons chia seeds (mixed with 6 tablespoons water to form a gel for vegan option)

• 1 egg (or chia gel for vegan option)

• 1/4 cup oat flour (or whole wheat flour if gluten-free is not necessary)

• 1 clove garlic (minced)

• 1/2 teaspoon cumin

• Salt and pepper to taste

• Olive oil (for brushing or greasing the pan)

• 1/2 cup grated cheddar cheese (optional, use vegan cheese if preferred)

Preparation Steps:


1. Preheat the Oven: Set the oven to 180°C (350°F).

2. Prepare the Vegetables: Place the grated sweet potato and steamed, mashed cauliflower into a large mixing bowl.

3. Add the Other Ingredients: Add the chia gel (for vegan option) or egg, flour, garlic, cumin, salt, and pepper to the vegetables and mix well.

Option 1: Fritters


4. Shape the Fritters: Use a spoon to scoop small portions of the mixture, shape them into fritters, and place them on a baking tray lined with parchment paper.

5. Brush with Olive Oil: Lightly brush the tops with olive oil.

6. Bake: Bake the fritters at 180°C for 25-30 minutes, flipping them halfway through for even browning.

7. Serve: Serve the fritters hot.


Option 2: Baked in a Single Dish
