Beetroot Hummus

I already like hummus, but sometimes I like to make it with different colors and different legumes. :) A change of color and flavor is always good. :)

PREPARATION:

Ingredients

  • 1 medium sized boiled or baked beetroot

  • 1 cup chickpeas

  • 1/2 lemon juice (you can reduce it according to your preference)

  • 2 teaspoons of cumin

  • 3 tablespoons tahini

  • 3 cloves of garlic

  • Salt and pepper to your liking

  • 1 ice cube or 2 tablespoons cold water

Preparation

1. We soak the chickpeas in water overnight. Then we boil them. (I prefer to peel them before using.)


2. In the food processor, first add the boiled beetroot, cumin, tahini, garlic, salt and black pepper and blend well.


3. Then I add the peeled chickpeas.


4. When it becomes puree, add lemon juice and blend again. Check the flavor and add spices and tahini if necessary.


5. After drizzling olive oil over it, I sprinkled hemp seeds to decorate, but you can also use seeds or chia seeds.
