Ingredients

• 500g green parts of leeks

• 2 medium-sized purple carrots

• Juice of 1/4 lemon

• A small piece of lemon zest (grated)

• 3 garlic cloves

• Salt and black pepper (to taste)

• Olive oil

Preparation

1. Prepare the Vegetables: Chop the green parts of the leeks and the purple carrots.

2. Sauté: In a pot, heat olive oil and sauté the leeks, carrots, and garlic until softened.

3. Add Water: Pour in enough water to cover the vegetables. Simmer until all ingredients are fully cooked and tender.

4. Blend: Use a blender to puree the mixture until smooth and creamy.

5. Season: Add lemon juice, grated lemon zest, salt, and black pepper. Adjust the seasoning to taste.
