Lentil-Topped Celery Steak with Cauliflower Mousse

Ingredients

For Celery Steak:

• 1 large celery root (sliced into steak-like pieces)

• 1 tablespoon olive oil

• 1 teaspoon vegetable seasoning mix

• 2 garlic cloves (minced)

• Salt, pepper, and spices (cumin, sweet paprika, etc.)


For Cauliflower Puree:

• 1 small cauliflower (cut into florets)

• 1–2 garlic cloves

• 1/4 cup water

• 1 tablespoon olive oil

• Salt, pepper, and kumquat zest

• Optional: 1 tablespoon concentrated almond milk

• Optional: 1 medium onion (sautéed or roasted)


For Lentil Mushroom Mix:

• 1 cup green lentils (cooked)

• 200 g mushrooms (chopped)

• 1 red bell pepper (diced)

• 1 medium onion (diced)

• 2 garlic cloves (minced)

• 1 tablespoon olive oil

• Salt and pepper

Preparation

1. Preparing the Celery Steaks

1. Preheat the oven to 180°C (fan-assisted).

2. Toss the celery slices with olive oil, vegetable seasoning, minced garlic, and spices.

3. Arrange on a baking sheet lined with parchment paper and bake for 20–25 minutes until the tops are golden.


2. Preparing the Cauliflower Puree

1. Steam or boil the cauliflower florets until soft.

2. Transfer the cooked cauliflower to a blender, add garlic, onion, almond milk concentrate, olive oil, salt, and pepper.

3. Blend until smooth and creamy. The texture should be light, similar to a mousse.


3. Lentil Mushroom Mix

1. Heat olive oil and a splash of water in a large pan.

2. Add the onion and garlic, and sauté lightly.

3. Add the chopped mushrooms and red bell pepper, and cook until they release and absorb their juices.

4. Stir in the cooked lentils and season with salt and pepper. Sauté for another 2–3 minutes before serving.
