Ingredients

For the Spinach Mixture:


• 1 medium onion (diced)

• 2 garlic cloves (minced)

• 2 tbsp olive oil or water (for sautéing)

• 700g fresh spinach (washed and roughly chopped)


For the Chickpea Batter:


• ½ cup cooked chickpeas (roughly mashed or pulsed in a food processor)

• ½ cup sorghum flour (or gluten-free flour alternative)

• 2 tsp psyllium husk

• 1 tbsp vegetable stock powder

• 1 cup steamed cauliflower (blended into a smooth mash)

• 2 tbsp plant-based milk

• ½ tsp grated nutmeg

• ½ tsp salt

• ½ cup water (adjust for consistency) Optional cheese on top

Preparation

1. Prepare the Spinach Mixture:

• In a skillet, sauté the onion and garlic with olive oil or water over medium heat until softened.

• Add the spinach and cook on low heat until wilted and it releases its liquid. Set aside.

2. Prepare the Batter:

• In a mixing bowl, combine mashed chickpeas, sorghum flour, psyllium husk, vegetable stock powder, and salt.

• Add steamed cauliflower, plant-based milk, nutmeg, and water. Mix until a smooth, thick paste forms.

3. Combine:

• Stir the cooked spinach (including its liquid) into the batter mixture and mix thoroughly.

4. Bake:

• Preheat the oven to 180°C (350°F).

• Spread the mixture into a greased or parchment-lined baking dish. Optionally, top with grated vegan cheese.

• Bake for 25-30 minutes, or until the top is golden brown.

5. Serve:

• Let cool slightly before slicing. Serve warm as a main dish or a hearty side.
