Ingredients

• 1 pack of brussel sprouts

• 1 sweet potato

• 2 cloves of garlic

• 1 handful of prunes (washed and soaked in hot water)

• 1 tablespoon olive oil

• 1 teaspoon balsamic vinegar

• Salt (optional)

Preparation

1. Brussels Sprout Preparation:

• Clean the Brussels sprouts thoroughly and steam them for about 10 minutes until they become soft.

2. Sweet Potato Preparation:

• Cut the sweet potatoes into cubes with or without their skins. Add the garlic to the pan with its skins.

• Place the sweet potatoes and garlic on a baking tray covered with baking paper.

• Drizzle a little olive oil on top and bake in the oven at 180°C for approximately 20-25 minutes, until the edges begin to brown.

3. Prune Preparation:

• Wash the prunes and soak them in hot water for 10 minutes to soften them.

4. Blending:

• Place cooked sweet potatoes, brussel sprouts and softened prunes in a large bowl.

• Add olive oil, balsamic vinegar and a small amount of salt and mix well.

5. Service:

• You can serve the salad hot or warm.
