This recipe highlights the natural flavors of vegetables in a healthy, hearty dish.

Ingredients

• 1 cup boiled black chickpeas (previously soaked)

• 1 kg sliced eggplant (soaked in lemon water)

• 1 onion

• 3 garlic cloves (sautéed with the onion in olive oil)

• Tomato sauce (with garlic and salt)

• 1 tablespoon dried vegetables

• 3 tablespoons olive oil

Preparation

Boil the Chickpeas: After soaking overnight, boil the chickpeas and peel the skins.


Sauté the Onion and Garlic: Lightly sauté the onion and garlic in olive oil.


Bake the Eggplants: Season with salt, pepper, and olive oil, then bake.


Layer the Dish: In a baking dish, layer tomato sauce, sautéed onion, garlic, eggplant, and chickpeas. Repeat the layers twice.


Drizzle with Olive Oil: Top with tomato sauce, 1 tablespoon dried vegetables, and olive oil.


Bake: Cook at 180°C for 30-40 minutes.
