Ingredients

• 1 black radish (diced)

• 500g leeks (sliced)

• 2 garlic cloves (minced)

• Salt and black pepper to taste

• 1/4 teaspoon grated nutmeg

• 1 beef broth cube (or vegetable broth for a vegetarian option)

• 4 cups water

Preparation

1. Preparation:

• Wash and chop all vegetables. Dice the black radish and slice the leeks thinly.

2. Sauté:

• In a large pot, heat a little olive oil over medium heat. Add the garlic and sauté until fragrant.

3. Combine Ingredients:

• Add the black radish, leeks, and water to the pot. Crumble the broth cube into the mixture and stir.

4. Season:

• Add salt, black pepper, and grated nutmeg to taste.

5. Cook:

• Bring the mixture to a boil, then reduce the heat and let it simmer for about 20–25 minutes, or until the vegetables are tender.

6. Blend:

• Use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup to a blender and blend in batches.

7. Serve:

• Pour into bowls and garnish with a drizzle of olive oil or fresh herbs, if desired.


If you have a soup maker, simply add all ingredients into the machine and let it handle the cooking and blending for you. Easy and efficient!
