Chocolate has a parallel connection to happiness for me. When eating cake, I want to enjoy every bite without feeling guilty afterward! 🍫😁

This cake did just that. It took away my sweet cravings and was abundant enough for a larger cake. I’m sharing the recipe for a large cake (think of using a 28 cm pan). With one-third of this recipe, you can make a smaller cake that’s almost half the size.

Dry Ingredients


• 🌟 1/2 cup gluten-free oat flour

• 🌟 1/2 cup buckwheat flour

• 🌟 1 + 1/2 tsp psyllium husk powder

• 🌟 1.5 tsp baking soda

• 🌟 1.5 tsp baking powder

• 🌟 1 tsp salt

• 🌟 1 tsp sugar-free vanilla powder


Wet Ingredients


• 🌟 1/2 cup cocoa powder

• 🌟 2 cups boiling water

• 🌟 1/2 cup brewed Turkish coffee (no grounds) - Mix and let sit for 2–3 minutes.

• 🌟 2/3 cup olive oil

• 🌟 1.5–2 cups apple juice concentrate

• 🌟 2 tsp apple cider vinegar


Cream


• 🌟 1 + 3/4 cups boiled sweet potato or pumpkin puree

• 🌟 1 cup dates (soaked and pitted) or date puree

• 🌟 1/2 ripe avocado

• 🌟 1/2 cup cocoa powder

• 🌟 Optional: 1/4 cup apple juice concentrate

• 🌟 1/4 tsp sugar-free vanilla powder

• 🌟 1 pinch salt

• 🌟 Almond milk to adjust consistency (thick but spreadable)

1. Preheat Oven: Preheat the oven to 180°C (top/bottom heat, no fan).

2. Prepare the Cake Batter:

• In a large bowl, mix the dry ingredients.

• In a separate bowl, combine the wet ingredients (boiling water and cocoa mix with olive oil and apple juice concentrate). Let sit briefly, then add to the dry mixture and stir well.

• Add apple cider vinegar and quickly mix again.

• Divide the batter among three identical cake pans if possible for even baking, or use one large pan if preferred.

3. Bake the Cake Layers: Bake each layer (or whole cake) for 30–35 minutes, then let cool.

4. Make the Cream: In a food processor, blend the sweet potato or pumpkin puree, dates, avocado, cocoa powder, apple juice concentrate (if using), vanilla powder, salt, and almond milk as needed for spreadable consistency.

5. Assemble the Cake: Lightly moisten each cake layer with water if desired, then spread with chocolate cream. Add toppings of your choice, like chocolate chips, bananas, strawberries, etc., between layers.

Serve this cake with added fruits or chocolate chips if desired. It’s perfect for satisfying sweet cravings healthily!
