I’m sharing my fruity crumble cake recipe with you! 🍒🍑 This recipe is made with healthy ingredients, and it’s both light and delicious. Perfect for breakfast, a mid-day snack, or even as a dessert!

Ingredients

Fruits:

• Freezed1/2 kg cherry and 4 peach

• 2 tbsp apple juice concentrate/agave/maple


Dough :

• 1 cup buckwheat flour

• 1 cup fine oats

• 3 tsp tapioca

• 3 tsp psyllium husk

• 3 tsp chia seeds

• 3 tsp baking powder

• 1 tbsp cinnamon

• 2 tbsp avocado oil

• 1 tbsp apple juice concentrate/agave/maple

• 1-2 tbsp cold water

• pinch of salt

Preparation

1. Prepare the Fruit: Place frozen cherries and halved peaches in a baking dish. Bake at 170°C (fan) for 30 minutes until caramelized. Remove cherry pits after baking.

2. Make the Dough: In a bowl, mix the dry ingredients. Add the wet ingredients (avocado oil, apple juice concentrate, and water) and mix with a fork until crumbly dough forms. Let the dough rest in the fridge for 30 minutes.

3. Assemble: Add 2 tbsp agave into the baked fruit and half of the crumble dough and mix. Spread the rest of the dough on top.

4. Bake: Bake at 180°C (fan) for 30 minutes until golden.

5. Serve: Serve warm or chilled, with vegan yogurt or ice cream.
