For the Cookies:
• 2 tablespoons date puree
• 2 tablespoons almond butter
• 1 tablespoon chia seeds (mixed with 3 tablespoons of hot water to create a gel)
• 1 teaspoon cinnamon
• 1 teaspoon baking soda
• 2 tablespoons rolled oats
• 2 tablespoons oat flour
• 1 teaspoon vanilla extract (optional)
For the Chocolate Cream:
• 1 teaspoon date puree
• 1 teaspoon almond butter
• 1 teaspoon cocoa powder
• Vanilla extract (optional)
• 1 teaspoon hot water (add gradually as needed for desired consistency)

Preparation
1. Prepare the Dough:
In a bowl, mix the date puree, almond butter, chia gel, cinnamon, baking soda, rolled oats, and oat flour. Adjust the consistency as needed by adding a bit of water or flour.
2. Shape into Balls:
Take small portions of the mixture and roll them into balls, then place them on a baking sheet lined with parchment paper.
3. Flatten and Bake:
Use a glass to gently press down on the balls to flatten them, then bake in a preheated oven at 180°C (350°F) for 15-20 minutes.
4. Make the Chocolate Cream:
Mix the date puree, almond butter, cocoa powder, and vanilla extract until you have a thick, creamy consistency. Spread the cream on top of the cookies once they’ve cooled slightly.
